Makes one 1½-pound loaf
Ingredients:
0.5 cup buttermilk or milk, room temperature
1 stick butter, room temperature
2 large eggs, room temperature
1.5 teaspoon pure vanilla extract
1.25 cups mashed ripe bananas (2 large or 3 small)
1 teaspoon salt
1 cup granulated sugar
2 cups unbleached, all-purpose flour
1 teaspoon baking soda
0.75 teaspoon baking powder
0.67 cup chopped walnuts
Directions:
Spray the bread pan and kneading paddle with nonstick cooking spray.
Place all ingredients, in order listed, in the bread pan. (no stirring necessary)
Press menu button to select the "Cake" program. Press "Start" to mix and bake. While the batter is mixing, scrape
the sides of the bread pan with a rubber spatula to fully incorporate ingredients. If you skip this step there will have small globs of flour on the outside of the banana nut loaf.
When
cycle is complete, remove from bread pan and place on wire rack to cool completely
for best slicing results.
Don't forget to remove the kneading paddle from inside the bread when you cut the first piece.
