Keto, low carb and delicious.This quiche combines sausage, veges and green chile for an amazing spicy breakfast caserole style quiche. This quiche is great for meal prep.Just make one quiche and eat it all week.
Ingredients
1 tablespoon oil or ghee
1 onion, minced
1 pound Jimmy Dean Hot Sausage
8 ounces mushrooms, thinly sliced
10 ounces frozen spinach, thawed in microwave oven
13 oz Bueno frozen green chile
3 roma tomatoes
8 ounces cheese , shredded
10 large eggs
1 cup heavy cream
salt & pepper to taste
Directions
Preheat oven to 375 degrees.
Add oil or ghee to a large skillet and heat over medium high heat until hot.Add onions and saute until translucent - about 3-4 minutes.
Add sausage. Break up sausage with a spatula and cook until just done.
Add mushrooms and saute 3-5 minutes or until mushrooms have mostly cooked.
Add spinach and green chile (do not drain either the spinach or the chile).. Cook until almost all the liquid has evaporated.
At this point, Add salt and pepper as needed. Remember it should be a bit salty because we will need to have enough salt once we add the egg custard, that is not salted.
Place the sausage mixture into a cold rectangular pan and and let cool 5-10 minutes while you prepare the custard.
In a large bowl, mix eggs and cream until just frothy. Add shredded cheese and tomatoes and stir.
Pour the custard mixture over the sausage mixture and stir until well combined.
Place in oven and cook for about 45 minutes or until well browned and mostly firm.
