Hopshire Farm & Brewery is operated by Diane Gerhart and Randy Lacey as a family owned business. We have combined our belief in New York agriculture, local foods and great beer into a brewery that will use as many local ingredients as possible to product high quality beers of several styles.

Our Brewery | Hopshire Farm and Brewery
During the 19th century a distinctive style of barn developed in New York to dry hops. These hop houses included a tower or kiln to dry hops that were harvested in late summer. The geometry of hop kilns was consistent as they were built larger and smaller to suit each farm. A few of these hop houses have been preserved while there are skeletons of others. Our brew barn includes a precise re-creation or a New York hop kiln which is functional and will dry our hops. Also, construction of the building has used many local and recycled materials. Ash lumber was cut on our land for joists, the hand hewn beams in our tasting room are salvaged from a barn and our mahogany bar once held drinks in the legendary Plum’s Restaurant in Ithaca.

Our Farm | Hopshire Farm and Brewery
New York was once the Hop King. For 100 years between roughly 1810 and 1910 hops were grown in Central New York State in small plots on family farms. As breweries grew in the US, New York State became the primary supplier of hops in North America. Production peaked in the late 1800’s and in 1880 the production was over 20 million pounds which is remarkable considering the farming practices of the day and that hops were all hand-picked. The numbers are impressive even by today’s standards. Today 20 million pounds of hops would provide the annual needs of the three largest domestic craft brewers – Sam Adams, Sierra Nevada and New Belgium….. 5 times over!!!
