about Our Brewery We are one of the smallest brewpubs or breweries around, and this will probably never change as we are literally submerged underground with no chance of expanding. It's a good thing that the best things come in small packages! With the brewery connecting to the kitchen, we believe our strength lies in our ability to create great beer and food with Japanese-influences that pair well together and are also delicious on their own. The chefs and brewmasters will blur the lines of their traditionally defined roles creating a blend of culinary artists, scientists, and explorers. Read More Ji-dori means "chicken of the earth" and alludes to locally sourced free-range chickens with robust flavor in Japan. We use only this type of fresh chicken for all of our dishes including yakitori and ramen. Erba Verde Farms in East Aurora provides us with premium heirloom, free-range, organic, happy birds of the Freedom Ranger variety. They provide a darker and more robust, real chicken taste that is true to the Yakitori culture. At Sato Brewpub we focus on the beauty of chicken bone broth, known as Tori Paitan or Kyoto-Style Ramen. A variety of flavors from a thick, rich and creamy pure chicken broth with chicken koji-chashu to clear and complexly layered chicken broths. We specialize in yakitori skewered items, ramen, and other small plate dishes. We feature the best tasting locally raised organic free-range chicken, which we call "Buffalo Jidori." We aim to bring the same spirit, atmosphere and fun of Japanese izakaya, but we take it a step further by brewing our own Japanese inspired beers on-site with the brewery on display. Sato Brewpub is the first Japanese brewpub outside of Japan.

SATO decided to start brewing our own delicious beers after a strong collaboration with Buffalo's first micro-brewery, Community Beer Works. After working with Ethan Cox to develop our exclusive 'Yuz' Not That IPA', a yuzu citron IPA, we wanted to continue exploring with Japanese and local ingredients to create our own delicous beers that paired especially well with our food. We have also felt that the importation price of Japanese craft beer is not quite worth it, there are definitely great beers coming out of Japan but the prices tend to be overly inflated.
