A first for the nation, Carillon Brewing Company is the first licensed production brewery in a museum. Dayton History’s newest project, this 10,000 square foot living history exhibit and restaurant replicates every detail of the brewing techniques of the 1850s as a means to celebrate Dayton’s brewing heritage. Daily brewing and food way presentations create a platform for connection to all facets of this heritage by using replica equipment, historical recipes and ingredients, and costumed staff. Each pint and plate of hearty fare served are stories of immigration, daily life, transportation, and scientific processes from the past. RESTAURANT HOURS:

Come inside the Carillon Brewing Company and welcome back to the 1850s in Dayton. Here each step of the historical brewing process comes to life in front of you. Feel the heat radiate off the glowing charcoal fires under the large copper kettles. Smell malt wafting through the air as we mill the next batch’s grain. Watch as costumed staff hand ladle sweet wort into the boil kettle. Engage in a conversation with our brewer. Listen to stories about how Dayton’s brewing industry came to be.
