WE VALUE local over imported, small batches over mass production, and striking a successful balance between giving back to our community and personal profit. Localization guides everything we do, from sourcing raw ingredients and materials, to employing area talent.

Built over the course of thirteen months in an 85 year old building that once housed a trolly repair shop, Fermentaria offers up to 12 beers on tap and also serves as a production facility capable of producing as much as 10,000 barrels a year. From here, we will be supplying the world with strange and beautiful beers... starting with Philadelphia and then, beyond.

Calling our original location a "brewpub" would be a gross overstatement of our brewery model. We bake bread on-site and source our simple menu of cheeses, meats, pickles and seasonal produce from roughly 100 miles from our brewery. The culinary creation side of our operation takes place entirely behind the long first floor bar; you can think of it as an open air kitchen of sorts. Simply put, our food serves our beer.

This is where our beer goes to sit and condition for indeterminate lengths of time in one of our many oaken vessels. We realized the need for this tertiary space after trying to tend to a little over one hundred 60 gallon barrels at the Ferm. After a year or so, we realized that the physical constraints of the Ferm (wide open, but becoming more crowded every day) left us with very little space for engaging with these barrels. The answer? Blend and bottle away and move everything to a roomy off-site warehouse space. The Dispensary has allowed us to exponentially expand our oak program and now houses five new and used 60hl French oak foudres as well as a few hundred barrels/puncheons. The Dispensary also houses a fully functional lab, a climate controlled bottle conditioning room, an enormous drive in cold box, and a rotary bottling line (our old bottling line will now tend exclusively to our Brew Café magnum program).
